This easy vegan sweet potato pie is healthy-ish and only has 10 ingredients.
The pie crust is a pretty simple, with just 5 ingredients, all you need is a food processor. The pie filling really is mostly sweet potatoes, so its pretty wholesome. I use coconut sugar as a sweetener and I used flax eggs to bind it all together. You can use any plant milk for this recipe, but all I had was dry coconut milk powder that you mix with water, and its delicious. The only specialty ingredients that aren’t quite as wholesome are these vegan marshmallows.
For the crust:
1 C All purpose flour
3 TBS coconut oil
1 TSP sugar
pinch of salt
4 TBS cold water
For the filling:
2 Flax Eggs* (2 TBS ground flax seeds)
1.5 Large sweet potatoes, cooked, mashed
1 C plant milk
3/4 C Coconut sugar
cinnamon (I used pumpkin pie spice)
Topping: Vegan Marshmallows
Directions: to make crust, add flour, coconut oil, sugar and salt into food processor and pulse until mixed. Slowly add the cold water and pulse until mixed. Roll out the dough and line the pie pan. Bake pie crust at 425 degrees for 8 minutes.
to make pie filling: Mix all the pie ingredients together (I used a wooden spoon) * For flax eggs, mix ground flax seeds with 4 TBS cold water and let sit for a few minutes until the texture resembles egg whites. Pour pie filling into pie crust and bake at 350 degrees for 50 minutes.
Remove pie and add marshmallows, increase temp back to 420 degrees and place the pie back into the oven just long enough for the marshmallows to toast (about 7-9 minutes).
